I’m thrilled to share my “go to” morning meal. It’s been a couple years since I first created this gem, and let me tell ya, I still wake up excited for it! I call this the “BYO BREAKFAST CRUNCH.” Come get creative with me as you build your own. No matter if you’re switching up the fruits or nuts, the most important part is to start your day right and to have fun!
Rice cakes are a great gluten-free crunch. You can find it at most grocery stores for no more than $4. Make sure to check out the ingredient list, most rice cake options are filled with artificial flavors and sugars. For this dish let’s stick with the lightly salted or no salt Organic Whole Grain. My go to is the Lunberg Family Farms Brown Rice Cake.
Whether you enjoy the taste of peanut, almond or cashew butter, these three options will be a great source of energy. My favorite is none other than almond butter! Almond butter is a terrific source of the Vitamin B2, Riboflavin, and Vitamin E!
As you purchase the nut butter of your choice it’s important to grab one with minimal ingredients. Nut butters tend to have loads of sugars and oils that take away from the nutrition we’re aiming for.

Whether it’s almonds, salt and a quality oil, less is always better! Check out my QUICK TIPS on oils (located on the NOURISH home page.) Typically an organic/local “clean” nut butter tends to be a bit pricy. If you’re looking to save more in the long hall you may want to invest in a food processor. Grab an organic bag of your favorite nuts at COSTCO and create a fresh batch of your own.
This is where the real fun come in. Whether you decide to grab strawberries, raspberries, or blueberries. You’ll find any combination works.
When your purchasing any type of berries, you’ll want to make sure you go ORGANIC to ensure you’re not consuming unnecessary pesticides. As for the coconut flakes, consider purchasing an “unsweetened” kind. Coconut is already sweet on it’s own and we’ll be using some honey to sweeten this breakfast treat!
